4 ounces of tomatillo
6 ounces of chile picante (This is where the spice factor kicks in. You can use jalapeño chili for a more mild salsa or habanero chili if you like it HOT. Be advised that habanero chili is extremely spicy, so use with caution!)
1 white onion, chopped into quarters
1 branch of thyme
3 laurel leaves
2 cups of water
1 ounce of white vinegar
Salt, to taste

1. After thoroughly washing all of the ingredients, place them in a medium sized pot with 2 cups of water. Cook for about 10 minutes, or until the ingredients are soft.

2. Let cool. Once cool, mix all of the ingredients in an electric blender.

3. Return the salsa to the pot and bring it to a boil, adding one ounce of white vinegar and salt to taste.
